Growing up in such a place it was easy for my mother to teach me how to choose mild or hot peppers while she was in the kitchen preparing our family meals. She patiently taught me how to pick the most flavorful onions, the tastiest cloves of garlic and the freshest oregano and cilantro. My mother’s traditional Mexican kitchen is the birthplace of Tres Chiles.
